For the next 28 days I will be turning to a vegetarian diet to help myself become a healthier and ‘feel better’ me – I’ve called this my 28 Days Crave Veggies Challenge. Before the challenge, I had been feeling sluggish and thought this challenge would be just the boost my body needed, I was also concerned that too many of my meals, whether it was eating out or at home, revolved around meat and I wanted to find out was meat really necessary? This challenge (I hope) will be a fantastic food experience of discovering new satisfying meals packed with vegetables, whole grains and more. I’ve kicked the ‘habit’ of eating meat and giving the veggies a chance to take centre stage for a whole month – wish me luck!

Breakfast
Large bowl of Bran flakes with soya milk. Food Doctor Granola to snack on – very healthy to boot! Definitely one of my favourite cereals of all time. Will keep buying this and sharing. (sometimes!)

Lunch
Today’s lunch was at Canaletto Sandwich Bar in Soho on Beak Street. It was my first lunch here (very near the office), I’d always walk past this Cafe but had never tried it and thought I’d check out their vegetarian options. It’s a place that does HUGE homemade sandwiches, pasta and hot meals – the lot!! It’s possibly family run – the ‘grandma’ who served me was lovely! I ordered their egg mayonnaise, spinach and cheese on ciabatta – the sandwich was huge and super filling! (I couldn’t finish it all and had to leave just under half). It was great to find a completely independent cafe, which makes a nice change from all the bigger commercial sandwich/coffee places in this area.

Dinner
I wanted to recreate my Mexican favourite at home and made the healthiest & most colourful stir-fried veggie fajitas for dinner tonight! Spooned some of the vegetables onto a warm tortilla, topped with guacamole and soured cream and roll up. Yum!

Misc Snacks
Hotel Chcolat chocolate beans – I was craving for chocolate!

It’s not so much about the label ‘vegetarian’ as it is about challenging myself to be more conscious of what I eat and how it impacts me physically. I’ll keep you updated daily on this blog and twitter on what I’m eating and how I’m progressing during the challenge. Bring on Day 6 – thanks for reading :) – Cindz
